Hi Janet,
I have heard great things about 'Elm Tree cafe' on Cimitiere st in Launceston.
Check out this link for more restaurants that offer gluten free:
http://www.tas.coeliac.org.au/villi_news/wheretobuy.pdf
And as always, I suggest finding accommodation with a kitchen so that you can prepare your own meals if you need to.
Happy travels!

Seeking list of cafe's/restaurants in Tasmania's Noeth-West coast & Launceston who may specialize in gluten free food, it would make touring so much more simple. Janet
